Chicken Bubble Biscuit Bake Casserole

Ingredients:

  • For the Casserole:
    • 2 cups cooked chicken (shredded or diced)
    • 1 cup heavy cream
    • 1 cup shredded mozzarella cheese
    • ½ cup cream cheese (softened)
    • ½ cup chicken broth
    • 1 small onion (diced)
    • 1 cup spinach (chopped, optional)
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • Salt and pepper to taste
    • 1 tbsp olive oil or butter (for sautéing)
  • For the Biscuit Topping:
    • 1 ½ cups almond flour
    • 1 tsp baking powder
    • 2 large eggs
    • ¼ cup shredded cheddar cheese
    • 3 tbsp melted butter
    • ¼ tsp garlic powder
    • ¼ tsp salt

Instructions:

  1. Prepare the Biscuit Topping:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, mix together the almond flour, baking powder, garlic powder, and salt.
    • In another bowl, whisk together the eggs, melted butter, and shredded cheddar cheese.
    • Combine the wet ingredients into the dry ingredients and stir until well mixed. Set aside.
  2. Make the Casserole:
    • Heat the olive oil or butter in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until soft.
    • Add the chicken and garlic powder to the skillet, stirring to combine. Let it cook for another 2-3 minutes.
    • Reduce heat to low and stir in the heavy cream, cream cheese, chicken broth, and spinach. Let the mixture simmer for 5 minutes until it’s creamy and smooth.
    • Add in the shredded mozzarella cheese and mix until it’s melted and fully incorporated. Season with salt and pepper to taste.
  3. Assemble the Casserole:
    • Pour the chicken mixture into a greased 9×9-inch baking dish.
    • Using a spoon, drop spoonfuls of the biscuit dough over the casserole, covering as much of the surface as possible.
  4. Bake:
    • Place the casserole in the oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
    • Let it cool for a few minutes before serving.
