Chicken Bubble Biscuit Bake Casserole
Ingredients:
- For the Casserole:
- 2 cups cooked chicken (shredded or diced)
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup cream cheese (softened)
- ½ cup chicken broth
- 1 small onion (diced)
- 1 cup spinach (chopped, optional)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil or butter (for sautéing)
- For the Biscuit Topping:
- 1 ½ cups almond flour
- 1 tsp baking powder
- 2 large eggs
- ¼ cup shredded cheddar cheese
- 3 tbsp melted butter
- ¼ tsp garlic powder
- ¼ tsp salt
Instructions:
- Prepare the Biscuit Topping:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix together the almond flour, baking powder, garlic powder, and salt.
- In another bowl, whisk together the eggs, melted butter, and shredded cheddar cheese.
- Combine the wet ingredients into the dry ingredients and stir until well mixed. Set aside.
- Make the Casserole:
- Heat the olive oil or butter in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until soft.
- Add the chicken and garlic powder to the skillet, stirring to combine. Let it cook for another 2-3 minutes.
- Reduce heat to low and stir in the heavy cream, cream cheese, chicken broth, and spinach. Let the mixture simmer for 5 minutes until it’s creamy and smooth.
- Add in the shredded mozzarella cheese and mix until it’s melted and fully incorporated. Season with salt and pepper to taste.
- Assemble the Casserole:
- Pour the chicken mixture into a greased 9×9-inch baking dish.
- Using a spoon, drop spoonfuls of the biscuit dough over the casserole, covering as much of the surface as possible.
- Bake:
- Place the casserole in the oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
- Let it cool for a few minutes before serving.
