Cornish Beef Pasties

Ingredients

For the Pastry:

  • 2 cups almond flour
  • 1 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 large egg
  • 1/2 tsp xanthan gum (optional, for better texture)
  • Pinch of salt

For the Filling:

  • 1/2 lb ground beef (or finely diced beef)
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced turnip (as a low-carb potato substitute)
  • 1/4 cup finely diced carrots (optional; use sparingly)
  • 1 tbsp olive oil or butter
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Dough:

  1. In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 1 minute, stir, and microwave for another 30 seconds until melted and smooth.
  2. Add almond flour, xanthan gum, salt, and the egg to the melted cheese mixture. Mix until a dough forms. Knead for a few minutes to ensure everything is well combined.
  3. Wrap the dough in plastic wrap and chill in the fridge for 20-30 minutes.

2. Cook the Filling:

  1. Heat olive oil or butter in a skillet over medium heat. Add ground beef and cook until browned.
  2. Add onion, turnip, and carrot. Sauté until softened (about 5 minutes).
  3. Season with garlic powder, smoked paprika, salt, and pepper. Let the mixture cool.

3. Assemble the Pasties:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll the dough between two sheets of parchment paper to about 1/4-inch thickness. Cut out circles (4-6 inches in diameter).
  3. Place a spoonful of the beef filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.
  4. Brush the top with a beaten egg for a golden finish.

4. Bake:

  1. Place the pasties on the prepared baking sheet.
  2. Bake for 15-20 minutes or until golden brown and firm.

5. Serve and Enjoy:

Let the pasties cool slightly before serving. These are perfect with a side of low-carb gravy or a fresh salad!
