Fried Bologna Sandwiches

Ingredients:

  • 4 slices of bologna (sugar-free if possible)
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp butter or avocado oil
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard (optional)
  • 2 large lettuce leaves (or low-carb tortillas)

Instructions:

  1. Fry the Bologna:
    • Heat a non-stick skillet over medium heat.
    • Add bologna slices to the skillet and fry until the edges are crispy and slightly browned, about 2-3 minutes per side. Remove and set aside.
  2. Make a Cheese Egg Wrap:
    • In the same skillet, melt a little butter or oil.
    • Whisk the eggs and pour into the skillet. Cook like an omelet, spreading evenly.
    • Sprinkle shredded cheddar cheese on top and let it melt as the egg cooks through.
  3. Assemble the Sandwich:
    • Spread mayo and Dijon mustard onto the egg and cheese wrap.
    • Place two fried bologna slices on top.
    • Add a lettuce leaf or use low-carb tortillas for extra structure.
    • Roll or fold like a sandwich wrap.
  4. Serve:
    • Slice in half or enjoy as is. Perfect as a snack or quick meal!
