Fried Bologna Sandwiches
Ingredients:
- 4 slices of bologna (sugar-free if possible)
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 1 tbsp butter or avocado oil
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard (optional)
- 2 large lettuce leaves (or low-carb tortillas)
Instructions:
- Fry the Bologna:
- Heat a non-stick skillet over medium heat.
- Add bologna slices to the skillet and fry until the edges are crispy and slightly browned, about 2-3 minutes per side. Remove and set aside.
- Make a Cheese Egg Wrap:
- In the same skillet, melt a little butter or oil.
- Whisk the eggs and pour into the skillet. Cook like an omelet, spreading evenly.
- Sprinkle shredded cheddar cheese on top and let it melt as the egg cooks through.
- Assemble the Sandwich:
- Spread mayo and Dijon mustard onto the egg and cheese wrap.
- Place two fried bologna slices on top.
- Add a lettuce leaf or use low-carb tortillas for extra structure.
- Roll or fold like a sandwich wrap.
- Serve:
- Slice in half or enjoy as is. Perfect as a snack or quick meal!
