Heaven In A bowl
Ingredients
- 1 cup shredded rotisserie chicken (or any cooked chicken)
- 2 cups fresh spinach (or kale)
- 1 small avocado, diced
- 2 tbsp cream cheese (softened)
- 1 tbsp sour cream
- 1/4 cup shredded cheddar cheese (or mozzarella)
- 1 tbsp olive oil (or butter)
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Optional toppings: crumbled bacon, fresh parsley, or a drizzle of hot sauce
Instructions
- Sauté the Spinach:
Heat olive oil (or butter) in a skillet over medium heat. Add spinach and cook until wilted. Season with a pinch of salt and garlic powder. - Prepare the Creamy Base:
In a microwave-safe bowl, mix the cream cheese and sour cream. Microwave for 20-30 seconds until soft and creamy. Stir well to combine. - Assemble the Bowl:
- Add the sautéed spinach as the base of your bowl.
- Top with shredded chicken and diced avocado.
- Add Cheese & Heat:
Sprinkle shredded cheddar cheese on top and microwave for 30-60 seconds until melted. - Season & Serve:
Sprinkle with smoked paprika, black pepper, and any optional toppings like crumbled bacon or parsley. - Enjoy:
