Ingredients

  • 1 cup shredded rotisserie chicken (or any cooked chicken)
  • 2 cups fresh spinach (or kale)
  • 1 small avocado, diced
  • 2 tbsp cream cheese (softened)
  • 1 tbsp sour cream
  • 1/4 cup shredded cheddar cheese (or mozzarella)
  • 1 tbsp olive oil (or butter)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional toppings: crumbled bacon, fresh parsley, or a drizzle of hot sauce

Instructions

  1. Sauté the Spinach:
    Heat olive oil (or butter) in a skillet over medium heat. Add spinach and cook until wilted. Season with a pinch of salt and garlic powder.
  2. Prepare the Creamy Base:
    In a microwave-safe bowl, mix the cream cheese and sour cream. Microwave for 20-30 seconds until soft and creamy. Stir well to combine.
  3. Assemble the Bowl:
    • Add the sautéed spinach as the base of your bowl.
    • Top with shredded chicken and diced avocado.
  4. Add Cheese & Heat:
    Sprinkle shredded cheddar cheese on top and microwave for 30-60 seconds until melted.
  5. Season & Serve:
    Sprinkle with smoked paprika, black pepper, and any optional toppings like crumbled bacon or parsley.
  6. Enjoy:
    Dig into your warm, creamy, and absolutely heavenly keto bowl!
