WW Lemon Donuts Recipe

Ingredients:

  • 1 cup all-purpose flour (or whole wheat flour for a healthier twist)
  • 1/4 cup sweetener (such as stevia or erythritol)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 tbsp lemon zest (from about 1 lemon)
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional, for added flavor)
  • Powdered sugar (optional, for dusting)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a  donut pan with cooking spray or use a silicone donut mold for easy removal.
  2. Mix Dry Ingredients: In a medium bowl, combine the flour, sweetener, baking powder, baking soda, and salt. Stir to ensure the ingredients are evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the Greek yogurt, applesauce, egg,  lemon zest, lemon juice, vanilla extract, and almond extract (if using). Mix until smooth and fully combined.
  4. Combine Wet and Dry Ingredients: Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this could lead to dense donuts.
  5. Fill the Donut Pan: Spoon or pipe the batter into the donut pan, filling each cavity about 3/4 full. Smooth the tops with a spatula.
  6. Bake: Bake for 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean. Let the donuts cool in the pan for about 5 minutes, then remove them and place them on a wire rack to cool completely.
  7. Optional Glaze: If desired, dust the cooled donuts with a small amount of powdered sugar or drizzle a light lemon glaze made from powdered sweetener and lemon juice.
  8. Serve and Enjoy: These donuts are best enjoyed fresh but can be stored in an airtight container for a couple of days or frozen for longer storage.
