WW Lemon Donuts Recipe
Ingredients:
- 1 cup all-purpose flour (or whole wheat flour for a healthier twist)
- 1/4 cup sweetener (such as stevia or erythritol)
- 1 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 1/2 cup non-fat Greek yogurt
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 tbsp lemon zest (from about 1 lemon)
- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional, for added flavor)
- Powdered sugar (optional, for dusting)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with cooking spray or use a silicone donut mold for easy removal.
- Mix Dry Ingredients: In a medium bowl, combine the flour, sweetener, baking powder, baking soda, and salt. Stir to ensure the ingredients are evenly distributed.
- Combine Wet Ingredients: In a separate bowl, whisk together the Greek yogurt, applesauce, egg, lemon zest, lemon juice, vanilla extract, and almond extract (if using). Mix until smooth and fully combined.
- Combine Wet and Dry Ingredients: Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this could lead to dense donuts.
- Fill the Donut Pan: Spoon or pipe the batter into the donut pan, filling each cavity about 3/4 full. Smooth the tops with a spatula.
- Bake: Bake for 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean. Let the donuts cool in the pan for about 5 minutes, then remove them and place them on a wire rack to cool completely.
- Optional Glaze: If desired, dust the cooled donuts with a small amount of powdered sugar or drizzle a light lemon glaze made from powdered sweetener and lemon juice.
- Serve and Enjoy: These donuts are best enjoyed fresh but can be stored in an airtight container for a couple of days or frozen for longer storage.
