Air fryer Broccoli Cheddar Chicken
Ingredients
- 2 large chicken breasts
- 1 cup broccoli florets (finely chopped)
- ½ cup shredded cheddar cheese
- 2 tablespoons cream cheese (softened)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup panko breadcrumbs (optional, for a crispy coating)
- Cooking spray or olive oil spray
Instructions
- Prepare the Chicken
- Butterfly the chicken breasts by cutting them horizontally (but not all the way through), creating a pocket for the filling.
- Make the Filling
- In a small bowl, combine the chopped broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix well.
- Stuff the Chicken
- Spoon the broccoli-cheddar mixture evenly into the pockets of the chicken breasts. Secure with toothpicks if needed to keep the filling in place.
- Optional: Coat with Breadcrumbs
- For extra crunch, lightly spray the chicken with cooking spray and press each breast into panko breadcrumbs to coat.
- Air Fry the Chicken
- Preheat your air fryer to 375°F (190°C) for 3–5 minutes. Place the stuffed chicken in the air fryer basket in a single layer.
- Spray the chicken lightly with cooking spray.
- Air fry for 15–18 minutes, flipping halfway through, until the chicken is golden and reaches an internal temperature of 165°F (74°C).
- Serve
- Let the chicken rest for 5 minutes before serving. Pair with a side salad, rice, or roasted veggies for a complete meal.
