EASY MADE ITALIAN MEATLOAF

Ingredients:

  • 1 lb (500g) ground beef (80/20 works best)
  • 1 lb (500g) ground pork
  • 2 large eggs
  • 1/2 cup almond flour (or crushed pork rinds for extra crunch)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup unsweetened marinara sauce (keto-friendly)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese (optional, for topping)

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper.
  2. Mix Ingredients: In a large bowl, combine ground beef, ground pork, eggs, almond flour, Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix until fully incorporated.
  3. Shape Meatloaf: Transfer the mixture into the loaf pan, pressing it down evenly. Smooth the top.
  4. Add Sauce: Spread marinara sauce over the top of the meatloaf.
  5. Bake: Bake for 40–45 minutes or until the internal temperature reaches 160°F (70°C).
  6. Optional Cheese Topping: Add shredded mozzarella cheese during the last 5 minutes of baking for a melty, cheesy crust.
  7. Rest & Serve: Let the meatloaf cool for 5–10 minutes before slicing.
