VEGAN MUSHROOM AVOCADO TOAST

Ingredients:
2 slices of whole grain bread
1 ripe avocado
1 cup of sliced mushrooms
1 clove of garlic, minced
1 tablespoon of olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Preheat a large skillet over medium heat. Add the olive oil and sliced mushrooms. Sauté until the mushrooms are tender, about 5-7 minutes.
Add minced garlic to the pan and continue cooking for another minute or until the garlic is fragrant.
While the mushrooms are cooking, mash the avocado in a bowl and add salt and pepper to taste.
Toast the slices of bread in a toaster until golden brown.
Spread the mashed avocado evenly on the toast slices.
Top the avocado toast with sautéed mushrooms.
Garnish with fresh parsley.
