MAGIC LEMON COBBLER

Ingredients:

For the Batter:

  • ½ cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ¼ cup butter (melted)
  • ½ cup granulated keto sweetener (like erythritol or monk fruit)
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 eggs

For the Lemon Filling:

  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup granulated keto sweetener
  • 1 cup hot water

Instructions:

  1. Preheat Oven to 350°F (175°C) and grease a baking dish.
  2. Make the Batter – In a bowl, whisk together almond flour, coconut flour, baking powder, and sweetener. Add melted butter, eggs, almond milk, and vanilla. Stir until smooth.
  3. Pour Batter into the greased baking dish and spread evenly.
  4. Prepare the Lemon Filling – In a separate bowl, mix lemon juice, zest, and sweetener. Stir in hot water and pour the mixture gently over the batter.
  5. Bake for 30-35 minutes, until the top is golden and the cobbler is set. The magic happens as the layers flip while baking!
  6. Cool & Serve – Let it cool slightly before serving. Enjoy warm with a dollop of keto whipped cream!
