Roasted Parmesan Creamed Onions
Ingredients:
- 4 large onions (yellow or white), peeled and halved
- 3 tbsp butter, melted
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme (optional)
- Salt & pepper to taste
- ¼ cup shredded mozzarella or cheddar (for extra cheesiness)
Instructions:
- Preheat Oven: Set to 375°F (190°C).
- Prepare Onions: Slice onions in half and place them cut side up in a baking dish.
- Roast First: Brush with melted butter, season with salt, pepper, and thyme, then bake for 20 minutes until slightly softened.
- Add Cream & Cheese: Pour heavy cream over onions, sprinkle with garlic powder, onion powder, and Parmesan.
- Final Bake: Bake for another 20-25 minutes until golden and bubbly. For extra cheesiness, sprinkle shredded cheese in the last 5 minutes.
- Serve Hot: Enjoy as a rich, keto-friendly side dish!
