Roasted Parmesan Creamed Onions

Ingredients:

  • 4 large onions (yellow or white), peeled and halved
  • 3 tbsp butter, melted
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme (optional)
  • Salt & pepper to taste
  • ¼ cup shredded mozzarella or cheddar (for extra cheesiness)

Instructions:

  1. Preheat Oven: Set to 375°F (190°C).
  2. Prepare Onions: Slice onions in half and place them cut side up in a baking dish.
  3. Roast First: Brush with melted butter, season with salt, pepper, and thyme, then bake for 20 minutes until slightly softened.
  4. Add Cream & Cheese: Pour heavy cream over onions, sprinkle with garlic powder, onion powder, and Parmesan.
  5. Final Bake: Bake for another 20-25 minutes until golden and bubbly. For extra cheesiness, sprinkle shredded cheese in the last 5 minutes.
  6. Serve Hot: Enjoy as a rich, keto-friendly side dish!
