Keto Seven-layer Salad
Ingredients:
- For the Salad:
- 2 cups Romaine lettuce, chopped
- 1 cup cooked and crumbled bacon (about 6-8 strips)
- 1 cup shredded cheddar cheese
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup hard-boiled eggs, chopped
- For the Dressing:
- 1/2 cup mayonnaise (preferably full-fat)
- 2 tbsp sour cream
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions:
- Prepare the Salad:
- Start by layering the ingredients in a large clear glass bowl or dish for a beautiful presentation. Begin with the chopped Romaine lettuce as the first layer.
- Next, add a layer of diced cucumber, followed by the chopped tomatoes, red onion, and crumbled bacon. Add the hard-boiled eggs on top.
- Sprinkle the shredded cheddar cheese evenly over the top layer.
- Make the Dressing:
- In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar. Season with salt and pepper to taste.
- Assemble the Salad:
- Spread the dressing evenly over the top of the salad. You can also reserve some dressing for serving if you prefer.
- Cover the salad with plastic wrap and refrigerate for at least an hour before serving to allow the flavors to meld.
