ZESTY CAJUN SALMON AND SHRIMP DELIGH
Ingredients:
- For the Cajun Seasoning:
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (adjust to heat preference)
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- For the Salmon and Shrimp:
- 2 salmon fillets (about 6 oz each)
- 1/2 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tbsp butter
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Cajun Seasoning: In a small bowl, mix together paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.
- Season the Salmon and Shrimp: Rub both the salmon fillets and shrimp with olive oil. Sprinkle the Cajun seasoning generously over both, making sure they’re evenly coated.
- Cook the Salmon:
- Heat 1 tbsp of butter in a skillet over medium-high heat.
- Place the salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes per side, depending on thickness, until the salmon is cooked through and has a crispy crust. Remove from the skillet and set aside.
- Cook the Shrimp:
- In the same skillet, add the shrimp and cook for 2-3 minutes per side, until they turn pink and opaque. Remove from the skillet and set aside.
- Sauté Lemon Slices: In the same skillet, add a little more butter if necessary and toss in the lemon slices. Sauté for 1-2 minutes until slightly caramelized.
- Assemble: Serve the salmon fillets on a plate, top with shrimp, and garnish with sautéed lemon slices and fresh parsley.
