Keto Green Goddess Salad

Ingredients:
For the salad:

  • 2 cups chopped romaine lettuce
  • 1 cup chopped kale (optional: massage with a little olive oil for tenderness)
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • Optional: 1/4 cup toasted sunflower seeds or pumpkin seeds

For the Green Goddess Dressing:

  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1/4 cup sour cream
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 2 tbsp chopped chives
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Prepare the dressing:
    In a blender or food processor, combine mayonnaise, sour cream, olive oil, garlic, parsley, basil, chives, and lemon juice. Blend until smooth. Season with salt and pepper to taste. If the dressing is too thick, add a tablespoon of water to reach your desired consistency.
  2. Assemble the salad:
    In a large salad bowl, combine romaine lettuce, kale, cucumber, avocado, parsley, cilantro, and green onions. Toss gently.
  3. Add the dressing:
    Drizzle the Green Goddess dressing over the salad. Toss until the greens are well-coated.
  4. Serve and enjoy:
    Sprinkle toasted seeds on top for an extra crunch, if desired. Serve immediately and enjoy the refreshing flavors!
