Keto Pancakes

Ingredients:

  • 2 large eggs
  • 2 oz (60g) cream cheese (softened)
  • 1/4 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract (optional)
  • Pinch of salt
  • Butter or oil for cooking

Instructions:

  1. Blend the Batter: In a blender or mixing bowl, combine eggs, cream cheese, almond flour, baking powder, vanilla extract, and salt. Blend until the mixture is smooth and lump-free.
  2. Heat the Pan: Heat a non-stick pan or skillet over medium heat and add a little butter or oil.
  3. Cook the Pancakes: Pour small amounts of batter (about 2–3 tablespoons per pancake) onto the pan. Cook for 2–3 minutes until bubbles form on the surface and the edges are set.
  4. Flip and Finish: Carefully flip the pancakes and cook for another 1–2 minutes until golden brown on both sides.
  5. Serve: Stack the pancakes and serve with sugar-free syrup, berries, or a dollop of whipped cream.
