Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack (Weight Watchers Friendly)
Ingredients (Serves 4):
- 8 oz shrimp (peeled and deveined)
- 2 small red potatoes (thinly sliced)
- 1 ear of corn (cut into 4 pieces or use 1 cup frozen kernels)
- 4 oz smoked turkey sausage (sliced)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions:
- Preheat the oven or grill to 400°F (200°C).
- Prepare foil packs: Tear off 4 large pieces of heavy-duty aluminum foil.
- Combine ingredients: In a large bowl, toss the shrimp, potatoes, corn, and smoked sausage with olive oil, garlic powder, paprika, thyme, salt, and pepper.
- Assemble packs: Divide the mixture evenly among the 4 foil sheets. Fold the sides of the foil over the mixture, sealing the packs tightly.
- Cook: Place the foil packs on a baking sheet (if using the oven) or directly on the grill. Cook for 20-25 minutes until the potatoes are tender and shrimp is fully cooked.
- Serve: Carefully open the foil packs (watch out for steam), and garnish with fresh parsley.
