Mashed Potato Muffins

Ingredients:

  • 1 medium head of cauliflower, steamed and mashed
  • 2 large eggs
  • 1 cup shredded cheddar cheese (or your choice of cheese)
  • 1/4 cup almond flour (or coconut flour)
  • 2 tbsp butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, combine mashed cauliflower, eggs, cheese, almond flour, melted butter, garlic powder, onion powder, salt, and pepper. Mix well until a smooth batter forms.
  3. Scoop the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake for 20–25 minutes, or until the tops are golden and the muffins are set.
  5. Let them cool for 5 minutes in the tin before transferring them to a wire rack.
  6. Garnish with parsley if desired, and serve warm!
