Chicken Drumsticks with Seasoned Rice
Ingredients:
For the Chicken Drumsticks:
6 chicken drumsticks
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp cumin
Salt and black pepper to taste
For the Seasoned Rice:
1 cup long-grain rice
2 cups chicken broth
1/2 cup tomato sauce
1 small onion (finely chopped)
1 garlic clove (minced)
1/2 cup green peas
1 tsp turmeric or annatto powder
1 tsp chili powder
1 tbsp olive oil
Salt to taste
Instructions:
Prepare the Drumsticks:
Preheat the oven to 375°F (190°C).
Rub the drumsticks with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Arrange them on a baking sheet and bake for 30-35 minutes or until golden and fully cooked.
Cook the Seasoned Rice:
Heat 1 tbsp olive oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
Add the rice and toast for 1-2 minutes. Stir in the tomato sauce, chicken broth, turmeric, chili powder, and salt. Bring to a boil.
Lower the heat to a simmer, cover, and cook for 15-20 minutes until the rice is tender and the liquid is absorbed.
Stir in the green peas and fluff the rice with a fork.
Assemble and Serve:
Transfer the seasoned rice to a serving plate and top with the baked drumsticks. Garnish with fresh lime wedges or cilantro if desired.
