Skinny Creamy Broccoli Salad

Ingredients:

  • Fresh broccoli florets 6 cups
  • Sunflowers seeds 1/2 cup
  • Sliced red onions 1/2 cup
  • Greek yogurt 1 cup
  • Light mayonnaise 1/2 cup
  • Craisins (dried cranberries ) 1/2 cups
  • Dijon mustard 1 tsp.
  • Salt and pepper
  • garlic powder 1/2 teaspoon
  • Honey/ keto-friendly sweetener 2 tbsp.
  • Apple cider/ vinegar 2 tbsp.

Instructions:

  1. Broccoli wash it properly.
  2. To make the base of the creamy salad, combine in a bowl the red sliced onions, Craisins, sunflower seeds, and broccoli florets.
  3. Mix them and it gives you a colorful taste.
  4. Now add mayonnaise, apple cider vinegar, Greek yogurt, keto-friendly sweetener, garlic powder, Dijon mustard, pepper, and salt to form a creamy ranch dressing that will give your salad a creamy texture.
  5. Now pour the prepared ranch dressing onto the broccoli mixture and fold them gently, make sure you mix everything properly to give it a creamy texture.
  6. You can cover the salad with a lid or plastic wrap and let it cool overnight or, at a minimum for 2 hours to intensify the flavors.
  7. You can decorate the salad with any additional toppings you choose.
  8. You can serve this creamy salad as a side dish or a sweet dish for any gathering as well
  9. You can add smoked paprika or a drop of hot sauce for extra spicy flavor.
  10. Save this recipe only for 1 day.
