Keto Mozzarella Cheese “Ravioli” Bites

Ingredients:

  • For the dough:
    • 1 ½ cups almond flour
    • 1 egg
    • 1 ½ cups shredded mozzarella cheese
    • 2 tbsp cream cheese
    • 1 tsp baking powder
    • Salt, to taste
  • For the filling:
    • 1 cup fresh mozzarella cheese, cubed
    • 2 tbsp parmesan cheese, grated
    • 1 tbsp fresh basil, chopped (optional)
    • Salt and pepper, to taste
  • For the dipping sauce:
    • ½ cup marinara sauce (low carb)

Instructions:

  1. Prepare the Dough:
    • In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30 seconds, then stir until melted and smooth.
    • In a separate bowl, whisk together the almond flour, egg, baking powder, and salt.
    • Gradually add the dry ingredients to the melted cheese mixture. Mix until a dough forms.
  2. Shape the Dough:
    • Roll the dough into small balls (about 1-inch in diameter) and then flatten each ball into a small round disk.
    • Place a cube of mozzarella cheese in the center of each disk. Sprinkle with a little parmesan and fresh basil (optional).
    • Fold the dough over the filling to form a “ravioli” shape and pinch the edges to seal.
  3. Cook the Bites:
    • Heat a non-stick skillet over medium heat and lightly grease with oil or butter.
    • Carefully place the “ravioli” bites in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  4. Serve:
    • Serve the mozzarella bites with a side of warm marinara sauce for dipping.
