Keto Mozzarella Cheese “Ravioli” Bites
Ingredients:
- For the dough:
- 1 ½ cups almond flour
- 1 egg
- 1 ½ cups shredded mozzarella cheese
- 2 tbsp cream cheese
- 1 tsp baking powder
- Salt, to taste
- For the filling:
- 1 cup fresh mozzarella cheese, cubed
- 2 tbsp parmesan cheese, grated
- 1 tbsp fresh basil, chopped (optional)
- Salt and pepper, to taste
- For the dipping sauce:
- ½ cup marinara sauce (low carb)
Instructions:
- Prepare the Dough:
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30 seconds, then stir until melted and smooth.
- In a separate bowl, whisk together the almond flour, egg, baking powder, and salt.
- Gradually add the dry ingredients to the melted cheese mixture. Mix until a dough forms.
- Shape the Dough:
- Roll the dough into small balls (about 1-inch in diameter) and then flatten each ball into a small round disk.
- Place a cube of mozzarella cheese in the center of each disk. Sprinkle with a little parmesan and fresh basil (optional).
- Fold the dough over the filling to form a “ravioli” shape and pinch the edges to seal.
- Cook the Bites:
- Heat a non-stick skillet over medium heat and lightly grease with oil or butter.
- Carefully place the “ravioli” bites in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Serve:
- Serve the mozzarella bites with a side of warm marinara sauce for dipping.
