Home Made Keto Mix Salad

Ingredients:

  • Mixed Greens (spinach, arugula, lettuce) – 2 cups
  • Cucumber – 1, sliced
  • Cherry Tomatoes – 1/2 cup, halved
  • Avocado – 1, diced
  • Olives – 1/4 cup (green or black)
  • Red Onion – 1/4, thinly sliced
  • Cheese (feta, goat, or parmesan) – 1/4 cup, crumbled or grated
  • Chia Seeds or Pumpkin Seeds – 1 tbsp (optional)
  • Grilled Chicken or Tofu – 1/2 cup (optional for added protein)

Dressing:

  • Olive Oil – 2 tbsp
  • Apple Cider Vinegar – 1 tbsp
  • Lemon Juice – 1 tbsp
  • Mustard – 1 tsp (optional)
  • Garlic Powder – 1/2 tsp
  • Salt & Pepper – to taste

Instructions:

  1. Prepare the Salad Base: In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, avocado, olives, and red onion.
  2. Add Protein (Optional): For a more filling meal, top the salad with grilled chicken or tofu.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, mustard, garlic powder, salt, and pepper until well combined.
  4. Toss the Salad: Pour the dressing over the salad and toss gently to coat all the ingredients.
  5. Top with Cheese & Seeds: Sprinkle the crumbled cheese and seeds on top for added texture and flavor.
  6. Serve & Enjoy: Serve immediately for the freshest taste!
