Cottage Cheese Ice Cream
Ingredients:
- 2 cups cottage cheese (full-fat or low-fat, depending on preference)
- 1/2 cup heavy cream
- 1/4 cup sweetener of choice (e.g., erythritol, stevia, or honey)
- 1 teaspoon vanilla extract
- 1/2 cup almond milk (or any milk of your choice)
- 1/2 cup mix-ins (optional, like berries, chocolate chips, or nuts)
Instructions:
- Blend the Cottage Cheese: In a blender or food processor, combine the cottage cheese and almond milk. Blend until smooth and creamy.
- Add Sweetener and Vanilla: Add your chosen sweetener and vanilla extract to the mixture. Blend again to combine.
- Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.
- Combine: Gently fold the whipped cream into the cottage cheese mixture until fully incorporated.
- Add Mix-ins (Optional): If you want to add berries, chocolate chips, or nuts, fold them into the mixture at this point.
- Freeze: Pour the mixture into a loaf pan or ice cream container. Cover and freeze for at least 4 hours or overnight, until the ice cream is firm.
- Serve: Scoop and serve your creamy cottage cheese ice cream! Optionally, top with extra berries, chocolate drizzle, or a sprinkle of cinnamon.
