3 Smartpoints Oat Banana Blueberry Muffins

Ingredients:

  • 1 ripe banana, mashed
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup almond milk (or any milk of choice)
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp honey or maple syrup (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. Mash the banana in a large bowl until smooth. Add the applesauce, almond milk, egg, vanilla extract, and honey (if using). Mix well.
  3. In a separate bowl, combine the dry ingredients: rolled oats, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the blueberries.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool for a few minutes before transferring them to a wire rack.
