Cauliflower Pancakes

Ingredients:

  • 2 cups cauliflower, grated or riced
  • 2 large eggs
  • 1/4 cup all-purpose flour (or almond flour for gluten-free)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions (optional)
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • Olive oil or butter, for frying

Instructions:

  1. Prepare the Cauliflower:
    • If using fresh cauliflower, grate it finely or pulse in a food processor until riced.
    • Steam or microwave the cauliflower for 3-4 minutes to soften. Allow it to cool slightly, then squeeze out excess moisture using a clean kitchen towel.
  2. Mix the Batter:
    • In a large mixing bowl, combine the cooked cauliflower, eggs, flour, Parmesan cheese, green onions (if using), garlic powder, salt, and pepper. Mix until well incorporated.
  3. Form the Pancakes:
    • Scoop about 2 tablespoons of the mixture and shape into small pancake-sized patties.
  4. Cook the Pancakes:
    • Heat a skillet or griddle over medium heat and add a little olive oil or butter.
    • Place the cauliflower patties on the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve:
    • Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce. These also pair well with a fresh salad or as a side dish.
