Simple Ginger and Garlic Immunity Soup

Ingredients:
– 1 tablespoon olive oil
– 4 garlic cloves, minced
– 1 tablespoon fresh ginger, grated
– 1 medium onion, finely chopped
– 2 medium carrots, sliced
– 2 celery stalks, chopped
– 4 cups vegetable broth
– 1 cup water
– 1 teaspoon turmeric powder
– 1/2 teaspoon black pepper
– Juice of 1 lemon
– 1 cup kale or spinach, chopped
– Optional: fresh parsley for garnish

Directions:
1. Heat olive oil in a large pot over medium heat. Add garlic, ginger, and onion, sautéing until fragrant.
2. Stir in carrots, celery, turmeric, and black pepper. Cook for 5 minutes.
3. Add vegetable broth and water, bringing to a boil. Reduce heat and simmer for 20 minutes.
4. Add kale or spinach, cooking for 2–3 minutes until wilted.
5. Stir in lemon juice and garnish with parsley before serving.
