Ingredients:
1 block of firm tofu
1 large tomato, diced
1/2 cup of sliced mushrooms
1/2 onion, chopped
2 cups of spinach, chopped
1 avocado, sliced
Salt and pepper to taste
1 tsp of turmeric powder
1 tsp of garlic powder
1 tsp of cumin
4 tortillas
Instructions:
Start by pressing the tofu to remove excess water. Place the tofu block on a plate and place another plate or cutting board on top. Put a heavy object on top of the plate or cutting board, such as a can of beans, to press the tofu. Let it sit for about 10 minutes.
In a skillet, sauté the onions until they are translucent. Add the mushrooms and cook until they are tender. Add the diced tomatoes and spinach and cook until the spinach has wilted.
Crumble the tofu into the skillet with the vegetables. Add turmeric, garlic powder, cumin, salt, and pepper to taste. Mix well and cook for a few minutes until the tofu is heated through.
Warm the tortillas in the microwave or on a griddle.
Place the tofu scramble in the center of each tortilla. Add sliced avocado on top. Fold the sides of the tortilla towards the center, then roll it up tightly.
Serve immediately and enjoy your delicious breakfast burrito!
