Pecan Pie Bar
Ingredients
For the Crust:
- 2 cups almond flour
- 1/3 cup unsalted butter (melted)
- 1/4 cup powdered erythritol or monk fruit sweetener
- 1 tsp vanilla extract
For the Pecan Filling:
- 2 large eggs
- 3/4 cup brown sugar substitute (like Swerve Brown or Lakanto)
- 1/3 cup unsalted butter (melted)
- 1 tbsp heavy cream
- 1 tsp vanilla extract
- 1 1/2 cups chopped pecans
Instructions
Step 1: Make the Crust
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, melted butter, powdered sweetener, and vanilla extract. Stir until well combined.
- Press the mixture evenly into an 8×8-inch baking dish lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden. Set aside to cool.
Step 2: Prepare the Pecan Filling
- In a large bowl, whisk together eggs, brown sugar substitute, melted butter, heavy cream, and vanilla extract until smooth.
- Stir in chopped pecans until evenly distributed.
Step 3: Assemble and Bake
- Pour the pecan mixture over the cooled crust, spreading it evenly.
- Bake for 30-35 minutes or until the filling is set and the top is golden brown.
- Let it cool completely before slicing into bars.
Tips
- Store in an airtight container for up to 5 days or refrigerate for longer freshness.
- You can freeze the bars for future treats!
