Baked Cottage Cheese Eggs

Ingredients:

  • 4 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1/4 cup chopped spinach (optional)
  • 1/4 cup diced bell peppers
  • 1 tablespoon chopped green onions
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil (for greasing the dish)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a small baking dish with olive oil or cooking spray.
  2. Prepare Egg Mixture: In a bowl, whisk the eggs until well-beaten. Add the cottage cheese, spinach (if using), bell peppers, and green onions. Season with salt, pepper, and garlic powder. Mix everything well.
  3. Bake: Pour the egg mixture into the greased baking dish. Smooth the top with a spoon.
  4. Bake the Eggs: Place the dish in the oven and bake for 20-25 minutes, or until the eggs are set and lightly golden on top.
