Air Fryer Muffin Coffee Cake
Ingredients:
For the Muffins:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup milk (or almond milk)
- 1 large egg
- ¼ cup melted butter or vegetable oil
- 1 tsp vanilla extract
For the Crumb Topping:
- ⅓ cup all-purpose flour
- ⅓ cup brown sugar
- ½ tsp cinnamon
- 3 tbsp cold butter, cubed
Optional Glaze:
- ½ cup powdered sugar
- 1-2 tbsp milk or cream
- ¼ tsp vanilla extract
Instructions:
- Prepare the Topping:
- In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Set aside.
- Make the Muffin Batter:
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the milk, egg, melted butter, and vanilla. Add the wet ingredients to the dry ingredients and stir until just combined. Avoid overmixing.
- Assemble the Muffins:
- Line the air fryer basket with silicone muffin liners or parchment paper muffin cups.
- Fill each liner about halfway with the batter. Sprinkle the crumb topping generously over each muffin.
- Cook in the Air Fryer:
- Preheat the air fryer to 330°F (165°C) for 3 minutes.
- Place the muffins in the air fryer basket, leaving space between them for air circulation.
- Air fry for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- Optional Glaze:
- Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the muffins once they have cooled slightly.
