Instructions:

1. Make the Pineapple Filling:

  1. Combine pineapple and sugar in a saucepan over medium heat. Stir until the sugar dissolves.
  2. Reduce heat to low and cook until the mixture thickens, stirring occasionally. This may take 15-20 minutes.
  3. Add cinnamon (optional) and let cool. Roll into small balls once cool.

2. Prepare the Pastry Dough:

  1. In a bowl, mix flour and powdered sugar.
  2. Add cold butter and rub it into the flour mixture until crumbly.
  3. Mix in egg yolk and add cold water, one tablespoon at a time, until the dough forms. Wrap in plastic wrap and chill for 30 minutes.

3. Assemble the Tarts:

  1. Preheat your air fryer to 320°F (160°C).
  2. Roll out the chilled dough and cut into circles (2-3 inches in diameter).
  3. Place a ball of pineapple filling in the center of each circle and fold the dough over, sealing the edges.
  4. Shape as desired—classic enclosed or open-topped designs.
  5. Brush with an egg wash for a golden finish.

4. Air Fry the Tarts:

  1. Arrange tarts in the air fryer basket, leaving space between them.
  2. Air fry at 320°F (160°C) for 10-12 minutes or until golden brown.
  3. Cool before serving.
