Air Fryer Pineapple tarts
Ingredients:
For the Pineapple Filling:
- 2 cups fresh or canned pineapple, finely chopped
- 1/2 cup granulated sugar
- 1/2 tsp cinnamon (optional)
For the Pastry:
- 1 1/2 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1-2 tbsp cold water
Instructions:
1. Make the Pineapple Filling:
- Combine pineapple and sugar in a saucepan over medium heat. Stir until the sugar dissolves.
- Reduce heat to low and cook until the mixture thickens, stirring occasionally. This may take 15-20 minutes.
- Add cinnamon (optional) and let cool. Roll into small balls once cool.
2. Prepare the Pastry Dough:
- In a bowl, mix flour and powdered sugar.
- Add cold butter and rub it into the flour mixture until crumbly.
- Mix in egg yolk and add cold water, one tablespoon at a time, until the dough forms. Wrap in plastic wrap and chill for 30 minutes.
3. Assemble the Tarts:
- Preheat your air fryer to 320°F (160°C).
- Roll out the chilled dough and cut into circles (2-3 inches in diameter).
- Place a ball of pineapple filling in the center of each circle and fold the dough over, sealing the edges.
- Shape as desired—classic enclosed or open-topped designs.
- Brush with an egg wash for a golden finish.
4. Air Fry the Tarts:
- Arrange tarts in the air fryer basket, leaving space between them.
- Air fry at 320°F (160°C) for 10-12 minutes or until golden brown.
- Cool before serving.
