Air fryer Sausage Breakfast Muffins

Ingredients:

  • 1 cup cooked sausage crumbles
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions:

  1. Prepare the Filling:
    • In a mixing bowl, combine the cooked sausage, cheddar cheese, diced bell peppers, and onions (if using). Mix well.
  2. Prepare the Egg Mixture:
    • In another bowl, whisk the eggs, milk, salt, and pepper until well combined.
  3. Assemble the Muffins:
    • Spray silicone muffin cups with non-stick cooking spray.
    • Divide the sausage mixture evenly among the cups.
    • Pour the egg mixture into each cup, filling about 3/4 of the way.
  4. Preheat and Cook:
    • Preheat the air fryer to 350°F (175°C) for 3 minutes.
    • Place the muffin cups in the air fryer basket. Cook for 10–12 minutes, or until the eggs are set and lightly golden on top.
  5. Cool and Serve:
    • Let the muffins cool slightly before removing them from the silicone cups.
    • Serve warm, or store in the fridge for a quick breakfast option later.
