Air fryer Crispy Cheesy Potato Fritters

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, finely chopped
  • 1 egg, lightly beaten
  • 1/4 cup breadcrumbs (plus more for coating)
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Prepare the mixture:
    • In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, egg, breadcrumbs, garlic powder, paprika, salt, and pepper. Mix well until everything is combined.
  2. Shape the fritters:
    • Scoop about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
  3. Coat with breadcrumbs:
    • Roll each patty in breadcrumbs to create a crispy coating.
  4. Preheat the air fryer:
    • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  5. Cook the fritters:
    • Lightly spray the air fryer basket with cooking spray. Arrange the fritters in a single layer, leaving space between them.
    • Spray the tops of the fritters lightly with cooking spray to help them crisp up.
    • Cook at 375°F (190°C) for 10–12 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve:
    • Serve the fritters hot with your favorite dipping sauce, like sour cream, ranch, or ketchup.
