Homemade chicken taquitos

Ingredients:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/3 cup cream cheese, softened
  • 1/4 cup salsa or diced tomatoes
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 8-10 small flour or corn tortillas
  • Olive oil spray
  • Optional toppings: sour cream, guacamole, salsa, or chopped cilantro

Instructions:

  1. Prepare the Filling:
    • In a large bowl, mix shredded chicken, shredded cheese, cream cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper until well combined.
  2. Assemble the Taquitos:
    • Warm the tortillas slightly to make them pliable (microwave for about 10-15 seconds covered with a damp paper towel).
    • Place 2-3 tablespoons of the chicken mixture onto one side of a tortilla. Roll it tightly and secure it with a toothpick if needed.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
  4. Cook the Taquitos:
    • Spray the air fryer basket with olive oil spray to prevent sticking.
    • Place the taquitos seam side down in the basket, ensuring they are not touching.
    • Spray the tops of the taquitos with olive oil spray for extra crispiness.
    • Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.
  5. Serve:
    • Remove the toothpicks and serve the taquitos with your favorite toppings or dips.
