Homemade chicken taquitos
Ingredients:
- 2 cups cooked and shredded chicken (rotisserie chicken works well)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/3 cup cream cheese, softened
- 1/4 cup salsa or diced tomatoes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 8-10 small flour or corn tortillas
- Olive oil spray
- Optional toppings: sour cream, guacamole, salsa, or chopped cilantro
Instructions:
- Prepare the Filling:
- In a large bowl, mix shredded chicken, shredded cheese, cream cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper until well combined.
- Assemble the Taquitos:
- Warm the tortillas slightly to make them pliable (microwave for about 10-15 seconds covered with a damp paper towel).
- Place 2-3 tablespoons of the chicken mixture onto one side of a tortilla. Roll it tightly and secure it with a toothpick if needed.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
- Cook the Taquitos:
- Spray the air fryer basket with olive oil spray to prevent sticking.
- Place the taquitos seam side down in the basket, ensuring they are not touching.
- Spray the tops of the taquitos with olive oil spray for extra crispiness.
- Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.
- Serve:
- Remove the toothpicks and serve the taquitos with your favorite toppings or dips.
