Air fryer herb-roasted baby potatoes

Ingredients:

  • 1 lb (450g) baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for 3-5 minutes.
  2. Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with olive oil. Toss to coat evenly.
  3. Add Seasonings: Sprinkle garlic powder, onion powder, rosemary, thyme, paprika, salt, and black pepper over the potatoes. Toss until all potatoes are well coated with the seasoning.
  4. Cook the Potatoes: Arrange the potatoes in a single layer in the air fryer basket. Avoid overcrowding for even cooking.
  5. Air Fry: Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are golden brown and tender when pierced with a fork.
  6. Garnish and Serve: Remove from the air fryer and garnish with fresh parsley if desired. Serve warm as a side dish.
