Air Fryer Chicken Stuffed Baked Avocados

Ingredients:

  • 2 ripe avocados, halved and pitted
  • 1 cup cooked chicken, shredded
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup shredded cheddar cheese (plus extra for topping)
  • 1/4 cup diced tomatoes
  • 2 tablespoons chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: Hot sauce or salsa for topping

Instructions:

  1. Prepare the Filling:
    • In a bowl, mix the shredded chicken, sour cream (or Greek yogurt), shredded cheddar cheese, diced tomatoes, green onions, garlic powder, smoked paprika, salt, and pepper. Adjust seasoning to taste.
  2. Prepare the Avocado Halves:
    • Scoop out a small portion of the avocado flesh from each half to create a larger cavity for stuffing. Dice the removed flesh and mix it into the chicken filling.
  3. Stuff the Avocados:
    • Fill each avocado half with the prepared chicken mixture. Press gently to ensure the filling stays in place.
  4. Top with Cheese:
    • Sprinkle additional shredded cheddar cheese over the stuffed avocados.
  5. Air Fry:
    • Preheat the air fryer to 375°F (190°C).
    • Place the stuffed avocados in the air fryer basket. If needed, use foil to create a stable base for the avocados to prevent tipping.
    • Air fry for 5–7 minutes, or until the cheese is melted and slightly golden.
  6. Serve:
    • Carefully remove the avocados from the air fryer and let them cool slightly.
    • Top with hot sauce, salsa, or additional green onions if desired.
