Air fryer Egg Bites

Ingredients:

  • 6 large eggs
  • 1/4 cup milk or heavy cream
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup cooked bacon, ham, or sausage (chopped)
  • 1/4 cup chopped vegetables (e.g., spinach, bell peppers, or onions)
  • Salt and pepper, to taste
  • Non-stick spray or silicone muffin molds

Instructions:

  1. Prepare the Air Fryer:
    • Preheat your air fryer to 300°F (150°C).
    • Lightly grease silicone muffin molds or small ramekins with non-stick spray.
  2. Mix the Egg Mixture:
    • In a medium bowl, whisk together the eggs, milk, salt, and pepper until smooth.
    • Stir in the shredded cheese, cooked meat, and vegetables.
  3. Fill the Molds:
    • Divide the egg mixture evenly among the molds, filling each about 3/4 full to leave room for rising.
  4. Cook the Egg Bites:
    • Place the molds in the air fryer basket, ensuring they’re level and not overcrowded.
    • Cook for 10-12 minutes, or until the egg bites are set and slightly golden on top.
    • Check doneness by inserting a toothpick—it should come out clean.
  5. Cool and Serve:
    • Allow the egg bites to cool for 1-2 minutes before gently removing them from the molds.
    • Serve warm or store in an airtight container in the fridge for up to 4 days.

Tips:

  • Customize with your favorite fillings, such as feta cheese, mushrooms, or sun-dried tomatoes.
  • Reheat leftovers in the air fryer at 300°F (150°C) for 2-3 minutes.
