Ingredients:
- 1 can (15 oz) of sweet corn kernels, drained (or use fresh corn)
- 1/4 cup all-purpose flour (or whole wheat flour for a healthier option)
- 1 large egg
- 1/4 cup milk (or plant-based milk)
- 1/4 cup finely chopped onion
- 1/4 cup chopped bell pepper (optional)
- 1 tsp baking powder
- Salt and pepper, to taste
- 1/2 tsp garlic powder (optional)
- 1/2 tsp paprika (optional)
- Cooking spray (or a teaspoon of olive oil)
Instructions:
- Mix Wet Ingredients: In a medium bowl, whisk together the egg and milk until well combined.
- Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, salt, pepper, garlic powder, and paprika.
- Prepare Fritters: Add the drained corn, chopped onion, and bell pepper to the wet ingredients. Stir in the dry ingredients and mix until just combined. If the batter is too thick, add a little more milk to loosen it.
- Pan-Fry the Fritters: Heat a non-stick skillet over medium heat and lightly spray with cooking spray or add a small amount of olive oil. Drop spoonfuls of the batter into the skillet, pressing them down slightly to form small fritters. Cook for about 2-3 minutes on each side until golden brown and crispy.
- Serve: Serve these crispy corn fritters as a snack, side dish, or even as a light lunch. Enjoy with your favorite dipping sauce (Greek yogurt or a salsa would be great options)!
