Slow Cooker Cheddar Corn with Bacon 

Ingredients:

  • 4 cups frozen corn kernels
  • 4 slices of turkey bacon, chopped (or regular bacon if preferred)
  • 1 cup reduced-fat sharp cheddar cheese, shredded
  • 1/4 cup reduced-fat cream cheese, softened
  • 1/4 cup skim milk
  • 1 tablespoon light butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley (optional, for garnish)

Instructions:

  1. Prepare Bacon:
    • In a skillet over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes. Drain excess fat on a paper towel and set aside.
  2. Combine Ingredients:
    • In the slow cooker, add the frozen corn, cooked bacon, shredded cheddar cheese, softened cream cheese, skim milk, light butter, garlic powder, and onion powder.
  3. Cook:
    • Stir everything together until evenly mixed. Cover and cook on low for 3-4 hours, or until the corn is tender and the cheese has melted completely.
  4. Season and Serve:
    • After cooking, taste and season with salt and pepper to your liking. If desired, sprinkle with fresh parsley for a pop of color.
  5. Enjoy!
    • Serve warm as a side dish and enjoy a creamy, cheesy, and savory treat with a lower calorie count!
