vegan tortilla soup
ingridients
- 1 can (15oz) of Pinto Beans drained and rinsed
- 1 can (15oz) of Black Beans, drained and rinsed
- 1 can (15oz) of Corn, drained
- 1 can of Chipotle Rotel
- 1 Packet of Taco Bell Taco Seasoning
- 1 White Onion, chopped
- 1 bushel of Cilantro, chopped
- 1 carton of Vegetable Broth
- 2 tablespoons of Minced Garlic
- 1 tablespoon of Chili Powder
- 1/2 tablespoon of Paprika
- 1/2 tablespoon of Garlic Powder
- 1 & 1/2 tablespoons of Salt
- 1 & 1/2 tablespoons of Pepper
Put all in one large pot, broth last, on medium/high heat covered stirring occasionally til boiling. Reduce to low/medium heat after 10 minutes stirring occasionally. Continue to cook on low boil for 35 minutes stirring often.
-Makes 3-4 servings!-
Best severed with tortilla chips on the side.
