Ingredients:

  • Mini sweet peppers
  • Fat-free or reduced-fat cream cheese or another low-fat cheese of your choice

Instructions:

  1. Wash and slice the mini sweet peppers in half lengthwise, removing the seeds.
  2. In a small bowl, mix the cream cheese until smooth.
  3. Spoon a small amount of cream cheese into each mini pepper half.
  4. Arrange the stuffed peppers on a serving platter.
  5. Optionally, sprinkle with some chopped fresh herbs, such as chives or parsley, for added flavor.
