Banana Cottage Cheese Crustless Bread Minis
Ingredients
1 ripe banana, mashed
1/2 cup cottage cheese
1/2 cup rolled oats
1/4 cup honey (or maple syrup)
1 large egg
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
Optional: 1/4 cup mini chocolate chips or chopped nuts
Directions
Step 1: Preheat Oven
Preheat your oven to 350°F (175°C).
Grease a mini muffin tin or line with mini muffin liners.
Step 2: Blend Batter
Add the banana, cottage cheese, rolled oats, honey, egg, vanilla extract, cinnamon, baking powder, baking soda, and salt to a blender.
Blend until the mixture is smooth and well combined.
Step 3: Add Mix-Ins
If using chocolate chips or nuts, gently fold them into the batter by hand.
Step 4: Fill Muffin Tin
Spoon the batter evenly into the mini muffin cups, filling about 3/4 full.
Step 5: Bake
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool and Serve
