Air Fryer Cashew Chicken
Ingredients:
For the Chicken:
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tbsp oil (vegetable or sesame)
- ½ tsp garlic powder
- ½ tsp black pepper
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- ½ tbsp sesame oil
- 1 tsp ginger (grated)
- 2 garlic cloves (minced)
- ½ tsp red pepper flakes (optional, for heat)
- 1 tsp cornstarch + 2 tbsp water (for thickening)
Add-Ins:
- ½ cup roasted cashews
- 1 bell pepper (chopped)
- 1 small onion (chopped)
- 2 green onions (chopped, for garnish)
- Sesame seeds (optional, for garnish)
Instructions:
1. Prep the Chicken:
- In a bowl, toss the chicken pieces with soy sauce, cornstarch, oil, garlic powder, and black pepper.
- Let it marinate for 10 minutes.
2. Air Fry the Chicken:
- Preheat your air fryer to 375°F (190°C).
- Spray the air fryer basket with oil and place the chicken in a single layer.
- Air fry for 8-10 minutes, shaking halfway through, until golden and crispy.
3. Make the Sauce:
- In a small pan over medium heat, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.
- Stir in the cornstarch slurry (cornstarch + water) and let it simmer until thickened.
4. Cook the Veggies & Assemble:
- In a large skillet, heat 1 tsp oil and sauté bell peppers and onions until slightly tender (2-3 minutes).
- Add the crispy air-fried chicken and pour the sauce over.
- Stir in the cashews and toss everything together until well coated.
5. Serve & Enjoy!
- Garnish with green onions and sesame seeds.
- Serve over steamed rice or noodles.
