Air Fryer Cashew Chicken

Ingredients:

For the Chicken:

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tbsp oil (vegetable or sesame)
  • ½ tsp garlic powder
  • ½ tsp black pepper

For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • ½ tbsp sesame oil
  • 1 tsp ginger (grated)
  • 2 garlic cloves (minced)
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tsp cornstarch + 2 tbsp water (for thickening)

Add-Ins:

  • ½ cup roasted cashews
  • 1 bell pepper (chopped)
  • 1 small onion (chopped)
  • 2 green onions (chopped, for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

1. Prep the Chicken:

  1. In a bowl, toss the chicken pieces with soy sauce, cornstarch, oil, garlic powder, and black pepper.
  2. Let it marinate for 10 minutes.

2. Air Fry the Chicken:

  1. Preheat your air fryer to 375°F (190°C).
  2. Spray the air fryer basket with oil and place the chicken in a single layer.
  3. Air fry for 8-10 minutes, shaking halfway through, until golden and crispy.

3. Make the Sauce:

  1. In a small pan over medium heat, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.
  2. Stir in the cornstarch slurry (cornstarch + water) and let it simmer until thickened.

4. Cook the Veggies & Assemble:

  1. In a large skillet, heat 1 tsp oil and sauté bell peppers and onions until slightly tender (2-3 minutes).
  2. Add the crispy air-fried chicken and pour the sauce over.
  3. Stir in the cashews and toss everything together until well coated.

5. Serve & Enjoy!

  • Garnish with green onions and sesame seeds.
  • Serve over steamed rice or noodles.
