lentil stew

Ingredients:
1/2 an onion
3 carrots
2 stalks celery
3- 4 potatoes
8 oz of lentils (uncooked)
Water
1 1/2 T Better than Bullion, vegetable
1 bay leaf
Salt and pepper to taste
Sauteed onion, carrots and celery. Add water and better than bullion, potatoes and bay leaf. Bring to a boil. Add lentils and turn to low heat and simmer until lentils and potatoes are soft. Salt and pepper to taste.
